SUMMER RECIPES BY THE CLINIQUE DE LA CROIX D’OR : QUICHE AND TOMATO PIE
The Clinique de la Croix d’Or accompanies your meals and proposes you a series of simple and delicious recipes to vary your diet.
This week, our nutrition coaches have selected two recipes: discover the quiche and the tomato pie. For each of the recipes, we reveal in more details what you eat. Lipids, fats, proteins or salt, we break down these summer dishes to give you a better understanding of what contains your plate.

QUICHE RECIPE
For 4 people, you need :
- Shortcrust pastry
- 300 ml of fresh cream
- 200g of smoked or plain bacon
- 3 eggs
- 50g of gruyere
- Nutmeg
- Salt
- Pepper


TOMATO PIE RECIPE
- Shortcrust pastry
- 4 large tomatoes
- A shallot
- A drizzle of olive oil
- Fresh herbs (savoury, basil or parsley)
- 40g of grated cheese
- 2 tablespoons of mustard
- Salt
- Pepper
WHAT DO WE EAT?

The result?
The quiche is rich in energy, it should not be removed from the diet but rather make sure not to consume in large quantities. Favour “homemade” food that is less rich in salt, and you can accompany it with vegetables to offset its high energy content. For people who do not need to consume too much salt, bacon can be replaced by chicken or white ham to reduce the quantity (for people over 65 years old, no restrictions are recommended).
The tomato pie is interesting because it is much richer than the quiche, and it is in season, but it cannot alone make up a meal. It is possible to picnic with hard-boiled eggs (for protein) and a piece of cheese (for calcium). It can also be considered to make a vegetable flan for a more interesting protein intake!
